Last Cambodian New Year, we watched 3,000 of our family’s beef sticks disappear in a single day.
The line started at 8:00am…
and didn’t stop until 5:00pm — when we ran out.
Nine hours of nonstop grilling.
What started as cooking for the community turned into something we didn’t expect.

The Line That Didn’t Stop
By the time the grills were hot, people were already waiting.
Not just a few — a steady line that carried through the entire day.
At times, the wait stretched well over an hour.
And still, people stayed.
Some had tried the beef sticks before. Some were trying them for the first time.
But almost everyone had the same reaction — they took a bite, paused for a moment… and then came back for more.
That’s the moment we’ve come to recognize.

More Than Just the Grill
The meat sticks may have been the draw, but they weren’t the only thing people came for.
One of the most talked-about dishes of the day was the papaya salad.
Made fresh to order, right in front of each customer.
Sweet. Sour. Salty. A little heat if you want it.
We’d mix it, let people taste it, and adjust it until it was exactly how they liked it.
That interaction — that moment — is part of what makes Cambodian food special.
It’s not just about serving food.
It’s about sharing it.
A Day That Felt Bigger Than Food
Throughout the day, the space around the grill became more than just a place to order.
Families gathered. Friends brought others back to try something new. People who had never experienced Cambodian food before found something they didn’t expect.
There was a rhythm to it — the smoke from the grill, the movement of the line, the conversations happening between strangers.
Food was the center of it, but the experience went beyond that.
This Year
Last year showed us something we won’t forget:
People are ready to experience Cambodian food.
This year, we’re getting ready to do it again.
More preparation. More food. The same grill. The same flavors.
But one thing hasn’t changed:
Everything is still made fresh — and there are only so many we can make in a day.
